
Ingredients for 1 Portion:
- 110.0 g Spaghetti
- 80.0 g Pecorino Romano
- 0.5 Pears
- 5.0 ml Olive Oil
- 3.0 g Salt
- 3.0 g Black Pepper

Instructions:
Grate the pecorino romano. Dice the half pear into 2 cm pieces. Fry the pear with salt and black pepper in olive oil for 10 minutes (until golden brown) on medium to high heat (5/6). Set aside. Boil the spaghetti till al dente with salt. 2 minutes before the pasta is done add a ladle of pasta water to the pan the pear was fried in and put it on full heat. Take about half a ladle of pasta water and add it to the grated pecorino romano and mix it to a paste. Add more pasta water if necessary. Once the spaghetti are done, add them to the pan. Add the pear. Add the cheese paste. Mix until it reaches the desired consistency.
Notes:
Reserve a few pieces of pear to garnish the dish in the end.
